Easy meal: Layered tuna and zucchini microwave bake
‘Bake’ is so not the right word when it’s done in a microwave. So this is my layered tuna and zucchini nuke, with mushroom, tomato and cheese.
Zap the zucchini slices with a teaspoon of water, covered, for 2 minutes or until slightly soft. Do this in a separate bowl so your final dish isn’t a wet fishy mess.
When cooked, layer the zucchini with cheese, tuna and whatever other veggie sliced you like, top it off with cheese and pop back in the microwave to melt the cheese.
Add pepper to taste, then serve.
Microwave cooking isn’t my favourite thing. I’m in my 30s, so approaching the ‘Microwave and Chemicals Paranoia’ stage of my life. But the internet seems satisfied with cooking heat and time in moderation:
- Don’t nuke the shit out of vegetables.
- Use a bit of water and cover with a plate so they cook faster (ie. less time being zapped).
Simple enough, right? Until science tells me it’s perfectly safe and still nutritious, I’ll stick to this.
