Easy meal: Toasted eggplant rounds with tomato and cheese
Eggplant rounds toasted on a sandwich press. My goodness, so easy.
Toast the eggplant slices until they soften to your liking. I cut cross-hatches into the tops of mine first. Not sure if it does anything, but I like it that way.
When soft enough, top with chopped tomato and shredded cheese. Microwave between 30 seconds to a minute just to melt the cheese.
So tasty. Kinda filling. Feta may be a better cheese choice.
