Easy meal: Microwave boiled eggs and veggies

Under this hillock of shredded cheese is a healthy pile of cucumber, cherry tomatoes and mushroom… and eggs hard-boiled in a microwave. I can confirm boiling eggs in a microwave can be both easy and non-explosive.

This is a pretty easy meal, but requires you remember you’ve left eggs somewhere, cooking. All up, it takes about 16 minutes of cooking and sitting time, plus another 4 minutes to cool and peel.

See the yolks are nice and firm.

The cheese didn’t do any favours for this dish. I’d recommend a small bit of cheese in a block next time, or a bit of salad cream or mayo instead. Or leave it out altogether if you want to make it more Paleo/Primal.
