Easy meal: Chicken, rice and spinach salad


This was my lunch:

Chicken (from a can)
Rice (from a pre-cooked tub)
Spinach (from a bag)
Shredded cheese
Mushroom (sliced)
Grape tomatoes (sliced)

I’m struggling to keep lunch interesting, easy and somewhat healthy by the Primal diet. There’s no gluten or refined sugars in this (or maybe a trace amount from the canned chicken), so even with rice and cheese, it’s good enough for me.


I’m excited to have a windowsill plant again, even if just temporarily. Rather than keep this store-bought coriander dying slowly in the fridge, I’ve put it in a glass of water, which should hopefully keep it more alive until I eat it all. I wonder what other lunchtime ingredients can be kept this way.
