Simple gluten free bread, pretty sure it’s Primal-friendly
We’re trying a low gluten, low refined sugar diet, based on the Primal Blueprint by Mark Sisson. It has its ups and downs – the good bit being we’ve opened up our eating to a wider range of foods since there’s no bread, the bad bit being there’s no bread.
So I made us some bread today, using Simple Bread by Elana’s Pantry. Instead of wheat flour and yeast, it uses almond meal and eggs; instead of sugar, uses agave nectar and apple cider vinegar. It came out just fantastic – like those shrink-wrapped dense loaves by Bodhi Bakery. A baby bread tin batch was surprisingly filling. We had it with a chicken stock broth and shredded chicken.
Next time I want to try making it like spicy fruit bread or chilli cheese bread. This is a great base recipe for what could be a huge rainbow of flavours. :) I got all the fancy ingredients from one health food shop, and the basics from a supermarket.
